Eggplant Parmigiana

I was looking through my pictures and found this dish that I haven't uploaded yet. I made this some random day, eggplant parmigiana and elbow noodles in a garlic butter sauce. 
The eggplant was baked and then topped with pasta sauce and mozzarella then placed under the broiler for a few minutes until golden brown. For the past, I cooked it as directed and drained it. In another pan I combined garlic, butter, onions, and seasonings to taste. tossed in some spinach and tomatoes and then combined it with the already prepared noodles. It was delicious- no left overs that night :-)
